Ingredients
- Chicken (thighs, legs, or breast), skin-on (2 1/2 -3 pounds)
- Lemon (1-2 sliced)
- Onions ( 2 large sliced)
- Garlic and Cloves (minced)
- Bay leaf 1-2
- Chicken Bouillon 1 Tablespoon
- Olive oil 1/4 cup
- Dijon or Grain Mustard (2 Tablespoons)
- 1 Scotch bonnet pepper
- chicken stock Or Water (1 cup or more)
Right Method
STEP 1
Take a food processor, mix together the roughly chopped onions, spring onion, pepper, chilies, parsley, garlic, and a pinch of salt. Also, add mustard and juice of a lemon. Mix it properly so that all flavors get blended.
STEP 2
Now put this marinade in one large bowl along with chicken pieces. Also, add finely chopped onions to it. Toss the mixture and leave it for a couple of hours. Toss it properly before leaving it for the marination.
STEP 3
Precisely heat up the oven for 200C/fan 180C/gas 6. It is time to take out the chicken from marination and remove the excess of it. Place the marinated chicken on the baking tray. Roast it in the oven for approximately 45 minutes. Make sure that your chicken converts into deep golden brown.

When the chicken is roasting in the oven, you should take a wide pan and heat some oil in it. Let the oil heat up and add the marination and onions. Stir the mixture for some time to create the Yassa sauce. Now, add a small amount of vinegar, bay, salt, and pepper. You should cook the mixture over medium-high heat for approximately 35 to 40 minutes. You should continually stir the mixture inside the pan until the onion starts to turn a little bit brown. Finally, add lemon juice to it and continually stir the mixture.
STEP 5
Once your mixture is cooked, then you can add the roasted chicken and some olives as well. Cover the pan and cook it for approximately 5 to 10 minutes. Keep the flame low so that all the flavors inside the pan mix well. If possible, then you should sprinkle a little bit of extra parsley over it. Finally, serve it with rice, couscous, or vermicelli.
