Ingredients for 6 servings (18 croquettes approx)

1⁄4 onion
Half carrot
A quarter of celery
A quarter of a leek
Half a pear tomato
250gr of oxtail
1 sprig of rosemary
1 shallot
Salt and ground pepper to taste
One tablespoon of EVOO
2 tablespoons of flour
150ml milk
2 butter nuts
A glass of red wine
Breadcrumbs and egg for breading
Steps to prepare the oxtail croquette
The steps for its preparation are simple, but, do not get lost! The key to its delicious result will be in the love you put into it.
